Historic Sussex hotel donates Christmas puddings to food bank

In past years, every guest staying at the hotel on December 24 is given the gift of a Spread Eagle pudding homemade from a very old ‘secret’ recipe.
The puddings are made on Stir-Up Sunday when everyone is brought together to make the delicious desserts under the direction of group executive chef Martin Hadden.

A spokesman for the hotel said: “Our Christmas Pudding tradition goes back years – every guest staying at the hotel on December 24 is given the gift of a Spread Eagle pudding homemade from a very old ‘secret’ recipe, if the guest wishes of course they can take it home with them, alternatively they may hang it on the ceiling in the restaurant and then on their return the following year we will take down their pudding, steam it and serve it to them at lunch.
“The ceiling in the restaurant is decorated with unclaimed puddings from over the years, some of them very old, we have pictures dated 1903 of the puddings hanging on the ceiling then!”
