Mintrim was appointed at The Oaks, alongside Steve Ives, following the departure of Anthony Storey in April 2020.
The pair lead the Uckers to fifth in the Premier Division last season before the campaign was curtailed.

Hide AdUckfield then used the Supplementary Shield as an opportunity to blood the club’s young guns.
The Uckers finished bottom of Group A, behind perennial title challengers Newhaven and Eastbourne Town, as well as Little Common.
Mintrim said: “I just haven’t been able to give the project the time commitment that I wanted to or that it deserves and that’s not going to improve next season.
“The balance didn’t feel right between what Steve is giving it compared to what I am.

Ives added: “This project was the third time we’ve worked together. We’ve built a strong friendship and understanding so it’s going to be a bit strange without him to start with.
“Football is very transient at this level, people come and go so you learn to keep looking forwards.
“I’d like to put on record my thanks to Grim (Mintrim), for believing in this project and being a massive part of creating an environment that has allowed us all to thrive and grow together.

Posting on the club's official Twitter account, AFC Uckfield Town said: "The club would like to place on record the contribution Graeme has made to the club in what has been a challenging season.
