Cake creator wins first prize at Clandestine competition

A fashion-inspired, towering chocolate creation was awarded first prize at a cake competition held in Farnham.

The competition, which was held by the Clandestine Cake Club at Squires Kitchen Exhibition in Farnham, was won by West Sussex based cake creator Laure Moyle.

Laure was born in Beaujolais, and now lives in Ashington, where her bespoke cake business Pudding Fairy is also based.

She heard about the competition as a member of the Chichester Clandestine Cake Club, which is a gathering amateurs and professional bakers who meet once a month to share and taste cakes made around a specific theme.

Lynn Hill, founder of the Clandestine Cake Club, said: “We bake it, we eat it, and we talk about it.

“Our club meets in secret locations all over the world, but this isn’t your average club because with us, you really can have your cake and eat it.”

Laure’s cake creation was inspired by Spring/Summer Haute Couture, and was in-keeping with the competiton’s theme of ‘Half Dressed’, in which only 50 per cent of the cake can be covered or decorated.

Laure said: “I read the theme when I was flicking through a fashion article that talked about Nighwear as outwear being a strong theme seen in S/S 16 Haute Couture collections.

“I thought, this is a perfect interpretation: stripy pajamas and silky nighties, edible lace and lots of floral details.”

Creating the cake was a long and careful process that two days in total.

Laure had to hand cut, shape and paint a whole collection of sugarpaste daises, poppies and primroses, and then make layers of edible lace trimming out of a special sugar product called SugarVeil.

She created layer after layer of white chocolate ribbons, carefully dried out small pansies to decorate the top layer, and created a custom chocolate transfer stripped pattern out of cocoa butter.

The cake then has to be driven safely to Farnham and set up in the show room, alongside its fellow half dressed cakes.

The Squires Vouchers Laure was awarded will help her perfect her craft, as she’ll be back in the Squires school this year to further her chocolate training with Master Chocolatire Mark Tilling.
