Igor Beaulieu who opened the popular Rocking Horse bar in Worthing two years ago, is looking to expand into the city with a second cocktail bar in the former Knife and Fork restaurant at 30B Southgate.

He has applied to Chichester District Council for a change of use for the restaurant there and hopes to stamp his special brand on the city and open before the end of the year.

“It will be identical to Worthing,” Igor told the Observer, “The success of the Worthing bar was unbelievable. I struggled for the first six months because it was so popular and we started with three staff, but we have now ended up with seven.

“I think the Chichester bar will be even better and attract even more customers because we have a small kitchen and will be able to offer food. I also think we will get more customers during the week days than we do at Worthing.”

He hopes to be open for business before the end of the year but will offer a smaller cocktail menu than Worthing at first, building every week and then opening for food ““We want to make sure we can deliver and that everything is perfect,” said Igor.

Ambitious Igor who describes himself as a chef and mixologist said his team create ‘the ultimate customer experience, taking guests on a journey and explaining the background to the drinks’.

He said: “Each of our drinks tells a story from its origin to history of creation.

“As well as concocting these drinks, our team will share the story and educate the guest to discover their new likings and experiences, allowing them to be taken on a new journey.”

He is bringing his twin brother Alex, also a chef, into the business to run the Chichester bar.

Igor is already planning to open a third Rocking Horse bar and is currently looking for a venue somewhere between Tunbridge Wells in the east and Portsmouth to the west.
